Thanksgiving Party Menu
By Carol Selva
The holidays are a time when people want the familiar, they want traditions, and the seasonal" says Mary Cleaver of The Cleaver Company. She describes her Thanksgiving menu for 12 as "variations on the classic." The meal starts with a rich and delicious Caramelized Onion and Goat Cheese Tart which Cleaver likes for its harvest feel and because "it gives the humble onion an elegant presentation." And, she notes that the tart "is a great vegetarian option" for those who don't eat turkey. Wherever possible Cleaver, who is an advocate of sustainable agriculture, uses organic produce and she says "free-range turkey is healthier and tastes more flavorful."
The main course is rounded out with lots of interesting vegetables and some of the special heritage breads the Cleaver Company makes for Thanksgiving.
When it comes to serving this holiday feast, Cleaver suggests laying out the dishes as a buffet so everyone can help themselves then sit down at the table, that's "an easier way to do Thanksgiving when there often isn't enough room for all the food and all the guests at the table." And for dessert, what could be better than everyone's favorite, homemade pies? For 12 guests Cleaver suggests serving three different pies so everyone can have a taste of each and if you're lucky there'll be leftovers!
- Caramelized Onion and Goat Cheese Tart
- Roasted Free-Range Turkey, served with Gravy
- Sausage and Sage Cornbread Stuffing
- Parsnip and Potato Pommes Annas
- Sweet Potato Purée with Sesame Seeds
- Cranberry Orange Relish
- Squash, Onion, and Apple Ratatouille
- Green and Yellow Beans with Lemon and Shallots
- Pickled Watermelon Rind
- Shaker Saffron, Moravian Potato and Sally Lunn Breads
- Apple, Pumpkin, and Pecan Pies served with Whipped Cream
